The Art of Nigerian Cooking

Egusi Soup: A Hearty Meal

Also, one of Nigerian soup that brings comfort and satisfaction paired mostly with fufu or pounded yam. Recall that the art of making Nigerian dishes requires patience and attention. In this section we will guide you in the making of this soup to perfection Breath, relax and enjoy the process with us.

Ingredients

2 cups of grinded hand peeled melon (Buy HERE)

2 red onions

Blended Oron Crayfish(Buy HERE)

2 stock fish(Buy HERE)

Scotch bonnet

Ayamase pepper mix (Buy HERE)

4 Seasoning cubes

Uziza leaves(Buy HERE)

Protein of choice(meat,fish,chicken,turkey)

Palm oil (Buy HERE)

Grinded dried iru(Buy HERE)

Instruction

  • Assemble your ingredients
  • Soak your stock fish in hot water and a little salt for 20 minutes, sieve and rinse again with water
  • Wash your protein of choice, add to a pot, add your grounded scotch bonnet, seasoning cubes, one sliced red onion, salt and other seasoning of choice.
  • Once your protein is almost done add your washed stock fish and cook for 3 minutes then turn the heat off
  • Get a soup plate add your grounded hand peeled melon, add sliced red onion to it, scoop some meat broth and add the to mixture then stir, add small water just to keep the dough semi solid.
  • Heat up a fresh pot, add 1cup of palm oil, add half cup of ayamase pepper mix, grounded dried iru and stir till it blends with the oil then add your mixed hand peel melon dough.
  • Stir evenly and continues on medium-low heat until the melon dough is dried up looking like crumbs (please maintain efficient stir to avoid the mixture burning)
  • Add the meat broth and stir, if its too thick you can add a little water
  • Add your blended oron crayfish, stir and taste
  • Allow to the soup to boil for 5 minutes, please stir the soup at random to avoid burning
  • Add your washed dried uziza leaves and stir, then taste for salt and pepper. Turn off the heat
  • Your soup is ready.

Yam flour

Water

Wooden spoon

Instruction

  • Add to 3 cups of water to the pot and boil
  • Drizzle a little vegetable oil in the boiling water
  • Then gently pour in your yam flour as you stir consistently with a wooden spoon until mixture thickens and water evapourate for mixture to form a solid lump
  • Scoop a little to touch to check if lump is ready (the lump should not be too soft or too hard but stretchy to touch)
  • Your pounded yam is ready
